Job Summary

Captain - Takes food and beverage orders and execute them. Monitors and maintains high standard of quality and speedy service. Strictly adheres to the opening and closing procedures established for the outlet. Has a thorough understanding and knowledge of all food and beverage items in the menu. Trains and coaches new recruits through on-the-job-training. Ensures that the service station and surrounding area is kept clean and organized at all times. Maintains and monitors operating supplies par stock and control spoilage and wastage. Handles all guest complaints, requests and enquiries on food, beverage and service. Establishes a rapport with guests maintaining good customer relationship. Ensures proper shift handovers in terms of (Pos Handling, CCG Handover. etc.)

Steward - Serves food and beverage orders. Provides high standard of quality and speedy service. Sets tables for different meal periods and reset them during high turnovers. Sends soiled and collects clean linen from laundry before and after lunch service. Prepares mis-en-place and performs side duties.
Sends and collects operating equipment for burnishing according to the schedules established by the Stewarding Department. Collects all general requisitions and food and beverage requisitions. Assists in opening and closing procedures established for the outlet. Has a thorough understanding and knowledge of all food and beverage items in the menu. Ensures that the service station and surrounding area is kept clean and organized at all times.
